Philly’s Chilli

I do like a good chilli. A bit of spice and heat is so nice combined with the tomato and other veggies in there. Fab!

Ingredients:
500g 5% Mince Beef
2 Onions – Chopped
3 Carrots – Grated
4 cloves of Garlic
Tomato Puree
2 Oxo Cubes
2 Tins / Cartons of Chopped Tomatoes
1 Carton of Passata
1 tin Sweetcorn
1 Pepper Chopped
1 pack mixed peppers
1 tin of Red Kiddly Beans
Spices: Hot Chilli Powder, Hot Paprika, Chipotle pepper seeds.

Method:
Put a large pot on the hob and add a couple of squirts of frylight.

Add the onions and grated carrots. 

Add a little bit of black pepper and a small amount of salt to season. It’s not always necessary to use the oil. I have just added the onions and carrots and dry fried them without it.

Add the mince beef and let it cook. Add the stock cubes.

Add the tomato puree and the garlic.  Cook this for a few minutes.

Add the peppers, chillies, sweetcorn, tomatoes and pasatta. Add some water if you’d like to make the sauce a bit thinner.

Add the spices and stir in well.

Add the Kiddly Beans. 

Simmer for a good couple of hours.

Turn the heat off after simmering and leave overnight and portion out into tubs and freeze or refrigerate.
