I've had a pretty good week all told. It's been a quiet one. Nothing special or dramatic has happened and I've been fairly good foodwise. Although there's nothing much happening in my little life at the moment, there's plenty going on in others. I hope that I've been able to help with those that have needed me to be there for them this week. I've not really done much extra walking this week either. I've been a bit of a wanderer this week. My head hasn't been 100% on plan and I've been a bit worried about the things that are happening in our country at the moment. I can't tell you how long I've waited to get to use this headline! Seven seemed such a long way off and it felt over the last few weeks that I was never going to hit the mark. The week started well enough. I thought that I was going well but then a visit to my Mum put pay to that. She still had a load of Christmas goodies in the house. (She probably still does!) Chicken fried rice

A mess of chicken, rice and mixed veg. I've gone a bundle on getting a bit of chicken and the popping it into a frying pan. Either dry fried or with a squirt of Frylight in the pan. Simply cut the chicken into pieces and fry it in the pan until it's cooked. Add a teaspoon of Chinese Five Spice and some garlic if you want. Then add a bag of microwave rice and a couple of handfuls of mixed veggies. Give it a stir and add a bit of dark soy sauce to it...
